Broccoli and Eggplant curry




About the Recipe:

Again this is another healthy recipe posted with a Indian blend to it. This is Gujarati dish.I know many of us are against of eating Broccoli but making something like this will improve the chances to eat more and more broccoli.

Ingredients:

1.Season Ingredients
2.Eggplant
3.Potato
4.Broccoli
4.Onions
5.Lemon Juice

Preparation:

1.Cut Potatoes and boil them till they become tender but do not overcook them. Cut broccoli and eggplant.
2. Add seasoning items on a pan and saute onions with a pinch of salt and green chillies.
3.Add eggplant pieces and without the lid, stir fry together until they are cooked, but not overcooked.
4.Add broccoli florets after eggplant is half cooked.Cook them with lib closed.Broccoli gets cooked fast.
5.Now after they get cooked add potatoes and wait till it gets good consistency by adding water.


6.When water evaporates, check the seasoning, add lemon juice and mix well. Add Garam masala,coriander powder and coconut powder for added flavor. Let the gravy get thicker.
7.Heat through for few minutes. Remove from heat, can garnish with some extra fresh coriander leaves.
