Soy Cutlets

About the Recipe:
                           For thos who are Veggie lovers and don't prefer non-veg soy chunks have high amount of protein.It has high source of vitamins.Cutlets are deep fried oil which is unhealthy and having something like this will reduce the other risks...lol

Ingredients:
1. 1 1/2 cups of soy chunks
2. milk for soaking the soy chunks
3. Potatoes(2-3)
4.Onion
5.Ginger-garlic paste
6.Besan
7.Bread Crumbs

Preparation:
1.Initially soak soy in milk for few hours.After that remove all the water from them and blend them such that they turn into a paste
2.Meanwhile take potatoes, boil them and mash them to paste.


3.Now in a pan saute onions until light brown,green chillies,ginger-garlic paste ,soy paste and potato paste.Add salt ,cilli poder and little bot of garam masala to the paste for flavor.Add curry leaves and coriander leaves to it.
4.Now make a paste of besan powder with water by adding salt and chilli powder.Make sure no lumps are formed.
5.Keep your oil deep fried in the meantime.Now after the soy mixture cools,make them into small oval lumps,dip them into the besan and then over bread crumbs.(Bread crumbs give you the cripy texture to the cutlets.)
6.Let them get deep fried for a while and remove them.

Dum Aloo


About the Recipe:
                                This  is one of the rich creamed yummy recipes.This recipe tastes great with both rice and roti.

Ingredients:
Baby Potatoes
Onions
Tomatoes
Green Chilies
Ginger
Garlic
Coriander
Cashew Nuts
Grated Coconut


For Tempering:
Shah Jeera


Masala:
Chilli Powder
Garam Masala
Cumin-Coriander Powder

Preparation:

1) Add salt and turmeric to baby potatoes and pressure cook it for one whistle.
2) Soak hand full of cashew-nuts in warm water for about an hour.
3) Make a smooth paste of soaked cashew nuts,grated coconut,garlic pods, ginger and green chillies.
4) Add oil to the pan, fry onions and tomatoes until the raw smell is gone. Add them to the paste and make it
      like a puree.
5) Add some more oil to the pan and add shah-jeera, as it starts to splutter and the peeled-boiled baby
     potatoes and fry them slightly.
6) Now add the paste to the potatoes and bring it boil.
7) Garnish with chopped coriander.

Note: You can make the potatoes into two halves if they seem to big for you to eat.

Goat Curry


About the recipe:
                           This is another  very good recipe for non-veg lovers.Goat is generally a heavy dish and contains lots of oil.In this recipe we will remove all the unwanted oil and fat.

Ingredients:
1.Onions
2.Green Chillies
4.Goat cut into small pieces
5.Tomatoes

Preparation:
1.Initially wash goat peices and take them in a pressure cooker.
2.Add salt,garam masala,chilli powder,ginger garlic paste,turmeric powder.Let it cook with out closing the lid for 15-20 mins until you see oil oozing out of the piece.
3.Then put the lid of the pressure cooker after adding water and see that you get atleast 8 whistles.
4.Meantime saute onions.green chillies and tomatoes.(no seasoning)

5.Now add the pieces to the onion saute and let it cook for 20-30 mins in low flame.Add water as well in order to get good thick gravy and let it boil.
6.Now the goat curry is done.you can garnish it with coriander leaves.Add lemon juice to this curry which makes it really tasty.

Carrot Rice

About the Recipe:
                              Again this a healthy recipe made from carrots.Generally carrots are the veggies that get consumed less unless used in a particular dish and making variety of recipes like this will  increase our intake.

Ingredients:
1.Seasoning Ingredients
2.Grated carrot
3.Chopped garlic and grated ginger
4.Peanuts and Cashews
5.Curry and coriander leaves
6.Onions
7.Green chillies
8.Cooked Rice
9.Lemon Juice

Preparation:
1.Take a pan and get the seasoning Ingredients into oil.(Mustard,cumin,chana dala,urad dal,curry leaves,hing,red chillies). Now add pieces of garlic and ginger.Also add Peanuts and cashew nuts.
2.Now add Onions and green chillies and saute them until onions turn golden yellow.Mean while have the cooked rice ready.
3.Now add grated carrot and let it cook until raw flavor is lost.Make sure to cook it in low flame.
4.Add salt and chilli powder to the mixture now.
5.Now add rice to the carrot mix and stir for a while.Add drops of lemon juice at the end.
 6.That's it u r ready with healthy and tasty carrot rice.This will taste really good with raita.

(Optional: You can also add green peas to this which gives diff flavor.

Stuffed Pepper

 
About the recipe:
                             This recipe can be considered as a good lunch item but definitely heavy for a snack..ha ha...but this is an american style of cooking peppers and baking them.
Ingredients:
1.Ground chicken
2.Peppers(Any colour your preference)
3.Onions
4.Green chillies
5.Garlic
6.Coriander leaves
7.Cooked rice
8.Ajinimoto
9.Soy sauce and venigar
10.Italian & chilli sauces.
Preparation:
1.Initially boil the ground chicken for 10 mins.Then add salt,garam masala and chilli powder to the ground chicken.Pre-heat the oven to 350 C.
2.Then in the mean time cut the peppers in the shape as shown in pic.
3.Now mix chicken,rice,onions,garlic,green chillies,coriander leaves in a bowl.Add pinch of ajinomoto,soy sauce,vinegar and Italian  and chilli sauces.

 
4.Now stuff the peppers with this mixture until full and cover it with aluminum foil so that top rice does not get burnt when placed in oven.
5.Now change the temperature to 400 C in the oven and put the peppers in a baking pan or a tray to get them heated.
6. Remove the peppers after 40 mins.Sometime this time may change when the peppers are more fresh and juicy.When you take out the peppers they should be easy to tear.
7. And thats it , your Stuffed peppers are ready to eat with chillisauce for added flavour.

Carrot Kheer

About the recipe:
                             This is one of the healthy recipes because it contains carrots but u cannot call it a completely healthy one because you have lots of sugar.My mom makes this carrot kheer as a desert for parties and people start loving it.

Ingredients:
1.Carrots
2.Milk
3.Sugar
4.Powder of pistachio,almonds,cashews and cardamom 

Preparation:

1.Intially pressure cook carrots (one packet)along with milk for atleast half an hour.Let this get cold and then the carrots will be easy to blend in a blender like a puree.
2.In the meantime boil half gallon of milk in a vessel.After its heated up add carrot puree and stir continuously so that the mixture does not get burnt at the bottom.
3.Now while this is heating have the mixture of nuts ready and slightly powder them.
4.After you see the bubbling of the mixture in the vessel add one and half cup of sugar and continue boiling it until the raw flavor of carrot is lost.
5.Now add the nut powder and let it cool.This dish would be awesome when served cold.

Chilli Egg



About the Recipe:

The idea of this item was one of my friends and is really tasty particularly who wanna try out something really spicy.

Ingredients:

The items that u need for this recipe are nothing more.

1. Few Eggs
2.Green chillies
3.Garam Masala
4.Cumin powder and curry leaves

Preparation:















1.Initially boil eggs and keep them aside by cutting them as shown in picture .Cut chillies into two pieces as shown.
2.Now add cumin seeds and curry leaves.Add green chillies  and wait till they are fried enough.Then add garam masala and reduce the flame.Stir it until the raw flavor is lost and now add cut pieces of eggs.
3.Allow the eggs to be on flame for a while and your chilli egg is ready to eat after adding salt and coriander leaves.
